In this class, we step into one of Kanazawa’s top sushi restaurants to learn all about this beloved dish, from a chef with a lifetime’s worth of experience working to master the art of sushi-making. Through conversation with the chef, guests learn about seasonal seafood from the Sea of Japan, local sushi rice, and the craft behind nigiri sushi. Guests prepare ten pieces of sushi with expert guidance, then enjoy their results. If time allows, the chef can also prepare a special dish using the leftover sushi rice, ensuring that nothing goes to waste.

About the Restaurant
Located in the heart of Kanazawa, this second location of a popular sushi restaurant offers high-end sushi in a more relaxed, approachable setting. An up-and-coming sushi chef carefully prepares each piece using seasonal seafood from Hokuriku, especially Kanazawa and the Noto Peninsula, with a special sauce that brings out the ingredients’ natural flavors. The restaurant’s beautiful counter is made from a single slab of ginkgo wood. It is here that guests can watch as sushi is prepared right in front of them, to be enjoyed just a moment later.
